In Italy, my father has been a beekeeper for nearly 40 years and can attest to how the lives of bees are becoming increasingly difficult and endangered.
For bees living near intensive farming areas, the chances of survival against the toxins used by large industries are slim. The drought in the south and the violent weather events in the north are another sign of how the climate crisis is impacting the world of bees.
Just a couple of weeks ago, I was in Italy, and since it was my father's birthday, I decided to prepare a special cake for him.

It's rare for me to be back in Italy during springtime for my father's birthday, so this year, to celebrate, I decided to take on the challenge of preparing a special cake dedicated entirely to bees. This cake was to celebrate my father, who has cared for bees for so many years, and to serve as a hopeful sign for the season that has just begun.
The Importance of Bees
Bees are critical to the health of our ecosystem, and their decline could have devastating effects on agriculture and food production worldwide. This is why protecting and promoting their well-being is so important.
Many people don't realize the vast array of products bees provide us with, beyond just honey. There is a wide range of bee-related products that have found their way into culinary creations, from royal jelly and bee pollen to propolis and beeswax.
Royal jelly, known for its nourishing properties, has been used in desserts and even as a special ingredient in some gourmet dishes. Bee pollen, rich in vitamins and minerals, is often sprinkled over salads or incorporated into smoothies for an added nutritional boost. Propolis, with its natural antibacterial properties, is sometimes used as a flavoring or health supplement in teas and beverages. And beeswax is utilized in the kitchen to preserve food or add texture to certain dishes.
A Special Cake for a Special Occasion
For my father's birthday, I wanted to make a cake that not only celebrated him but also honored the bees he has cared for over the years. I chose a recipe that incorporated multiple bee products, showcasing their versatility and culinary potential.
The Honey Almond Cake was a perfect choice. Made with pure, local honey from my father's hives, ground almonds for a rich texture, and a touch of bee pollen for a unique twist, it was a tribute to the natural sweetness that bees bring to our world.
To complement the cake, I prepared a Lavender Honey Glaze. This simple yet aromatic glaze added a floral note to the dessert, enhancing the honey's natural flavors. Finally, a delicate garnish of candied edible flowers added a touch of elegance and beauty.
